These chocolate chip banana muffins are such an easy breakfast or snack to have around during the week. Theyโre soft, naturally sweetened with bananas and honey, and have some extra protein from the Greek yogurt and protein powder.
Theyโre also the perfect thing to make when you have a few ripe bananas sitting on the counter. My kids love anything with chocolate chips, so these are always an easy win in our house.
Chocolate Chip Banana Muffins
Wet Ingredients
- 3 ripe bananas
- 2 eggs
- 1 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1/4 cup honey
Dry Ingredients
- 2 cups oats, blended into oat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 scoop protein powder
- 1 cup chocolate chips
How to make it
- Preheat your oven to 350ยฐF and line or grease a muffin tin.
- Add the oats to a blender and blend until they become a fine oat flour.
- In a large bowl, mash the bananas. Add the eggs, Greek yogurt, vanilla, and honey and mix until combined.
- Add the oat flour, baking powder, baking soda, and protein powder. Mix until everything just comes together.
- Fold in the chocolate chips.
- Divide the batter evenly between the muffin cups. Add a few extra chocolate chips on top if you want.
- Bake for 22 to 25 minutes, or until the muffins are cooked through.
Notes
Let them cool for a few minutes and enjoy! Theyโre so good while theyโre still a little warm and the chocolate chips are melty. ๐๐ซ
