Loaded Taco Sweet Potato 🌮🍠

This is one of those dinners that checks all the boxes: easy, filling, protein-packed, and so satisfying.

The combination is so good! The sweetness from the potato, savory seasoned beef, creamy cottage cheese, fresh tomatoes, smashed avocado, and a spicy drizzle of sriracha. It feels like comfort food while still being made with simple, nourishing ingredients.

It’s also an easy one to customize for the whole family. Set out all the toppings and let everyone build their own!

Ingredients

  • 2 medium sweet potatoes
  • 1 lb ground beef
  • 1 bell pepper, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt + black pepper, to taste
  • Cherry tomatoes, halved
  • 2 avocados
  • Juice of 1 lime
  • Cottage cheese
  • Sriracha, for drizzling

How to make it

  1. Preheat your oven to 425°F.
  2. Pierce the sweet potatoes a few times with a fork and place them on a baking sheet. Bake for 45–60 minutes, depending on their size, until they’re completely soft in the center.
  3. While the potatoes are baking, heat the olive oil in a skillet over medium-high heat. Add the ground beef and season with garlic powder, onion powder, salt, and pepper. Cook until browned, breaking it apart as it cooks.
  4. Add the sliced bell pepper and sauté with the beef until softened.
  5. In a small bowl, mash the avocados with the lime juice and a pinch of salt.
  6. Once the sweet potatoes are tender, slice them down the center and fluff the inside with a fork. Load them up with the seasoned beef and peppers, cottage cheese, cherry tomatoes, and a generous spoonful of smashed avocado.
  7. Finish everything with a drizzle of sriracha.
