My kids always come home from school hungry, and with afternoon activities usually right around the corner, I like having a few quick snacks I can make that are actually filling and nutritious.
This pomegranate avocado toast has been a recent favorite.
It’s basically a slightly elevated version of classic avocado toast; creamy avocado with lime and salt, a drizzle of sweet and tangy pomegranate molasses, a fried egg, and fresh pomegranate seeds on top.
The combination is SO good. You get the creaminess from the avocado and egg, a little tanginess from the lime and pomegranate molasses, and then those fresh pops of sweetness from the pomegranate seeds.
It takes just a few minutes to put together, has a good balance of protein, healthy fats, and carbs, and feels substantial enough to hold everyone over until dinner.
And honestly, it’s just as good for an easy breakfast or lunch as it is for an after-school snack.
Ingredients
- 1 slice sourdough bread
- ½ ripe avocado
- Fresh lime juice
- Sea salt
- Pomegranate molasses
- 1 egg
- Fresh pomegranate seeds
How to make it
- Toast your sourdough until golden and crispy.
- Mash the avocado with a squeeze of fresh lime juice and a pinch of salt, then spread it over the warm sourdough.
- Drizzle pomegranate molasses over the avocado.
- Top with a freshly fried egg and finish with a sprinkle of fresh pomegranate seeds.
- That’s it! So simple, but the pomegranate molasses makes it feel completely different from your usual avocado toast.
