There are some salads you make because you should eat a salad… and then there are salads you actually crave. This is definitely the latter.
It’s fresh, filling, packed with protein, and has the most delicious herby dressing that I could genuinely eat straight off the spoon. The combination of peppery arugula, crisp cucumbers, juicy tomatoes, chickpeas, warm steak, and this dressing is just so good.
It also happens to be one of those meals that feels impressive without requiring a ton of work; which is always a win in my house.
For the salad
- Arugula
- Persian cucumbers, chopped
- Cherry tomatoes, halved
- Red onion, thinly sliced
- Chickpeas, drained and rinsed
- Steak of your choice
- Salt + pepper for seasoning
For the herby dressing
- 2 garlic cloves
- 1 cup fresh cilantro
- ½ cup fresh parsley
- 2 tablespoons vinegar
- ⅓ cup extra virgin olive oil
- 1 teaspoon dried oregano
- Salt, to taste
How to make it
- Start with the dressing. Add the garlic, cilantro, parsley, vinegar, olive oil, oregano, and salt to a blender or food processor and blend until everything comes together. Taste and adjust the salt or vinegar if needed.
- Season your steak generously with salt and pepper and sear it in a hot pan until cooked to your preferred doneness. Let it rest for a few minutes before slicing (don’t skip this part)
- Add the arugula to a large bowl or platter and top with cucumbers, cherry tomatoes, red onion, and chickpeas. Add your sliced steak and spoon that herby dressing all over the top.
Notes
And definitely save a little extra dressing on the side because you’re going to want more.
