Watermelon Halloumi Salad 🍉🥒🍋‍🟩

There are certain recipes that just taste like summer, and this is one of them.

Cold, juicy watermelon, crisp cucumbers, salty fried halloumi, fresh mint and a little jalapeño for heat; all finished with lots of fresh lime juice and a drizzle of honey.

It’s sweet, salty, tangy, a little spicy, and so refreshing. It’s also one of those recipes that doesn’t really require exact measurements. Just add everything to a big platter, taste as you go, and make it your own.

  • Watermelon, cubed
  • Cucumbers, sliced or chopped
  • Halloumi, sliced
  • Fresh mint leaves
  • Jalapeño, thinly sliced
  • Fresh lime juice
  • Honey, for drizzling

How to make it

  1. Start by slicing your halloumi and frying it in a hot pan for a couple of minutes on each side, until golden and slightly crispy.
  2. Add the watermelon and cucumbers to a large bowl or serving platter. Scatter the fresh mint and sliced jalapeño throughout, then top with the warm fried halloumi.
  3. Squeeze plenty of fresh lime juice over everything and finish with a light drizzle of honey.

I love how the warm, salty halloumi plays against the cold watermelon, while the jalapeño gives it just enough heat. The lime and honey tie everything together without needing a traditional dressing.

Serve it right away while the halloumi is still warm and the watermelon is cold. The perfect salad for these last warm days of summer.
